6 large eggs — room temperature
1 1/2 cups cottage cheese (full-fat recommended)
1/2 cup milk or half-and-half (or almond milk)
1 cup shredded cheddar (or favorite melting cheese)
1/2 cup grated Parmesan (optional)
1 small onion, finely diced
2 cloves garlic, minced
1–1 1/2 cups chopped greens or veg (spinach, kale, bell pepper, or broccoli)
1 tsp Dijon mustard
1 tsp fresh chopped herbs (thyme, chives, or parsley)
Salt and freshly ground black pepper, to taste
Butter or oil for greasing the dish
Optional: 2 tbsp flour or 2 tbsp almond flour (to set more firmly)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish with butter or oil.
Sauté the onion in a tablespoon of oil over medium heat until translucent and slightly golden, about 4–5 minutes. Add garlic in the last minute. Stir in any heartier veg (like peppers or broccoli) and cook until just tender.
In a large bowl, whisk the eggs until pale and slightly frothy. Add cottage cheese, milk, Dijon, and herbs; whisk lightly until mostly combined (you can leave cottage cheese a little lumpy or blend for a smoother custard).
Stir in the sautéed veg and 3/4 of the cheddar (reserve the rest for topping). If using flour or almond flour, whisk it in now to help the bake set more firmly.
Season the mixture with salt and pepper, then pour into the prepared baking dish. Smooth the top and sprinkle the reserved cheddar and Parmesan evenly over the surface.
Bake for 30–40 minutes until the top is golden and the center is set but still has a gentle jiggle. If desired, broil 1–2 minutes for a browner top, watching closely.
Let the casserole rest for 8–10 minutes before slicing. Garnish with extra herbs or a crack of black pepper and serve warm.
