Ingredients

  • 1 can Canned Chickpeas, drained and rinsed
  • 1 can Canned Kidney Beans, drained and rinsed
  • 1 cup Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • 1 small Red Onion, finely chopped
  • 1/2 cup Kalamata Olives, pitted and sliced
  • 3 tablespoons Extra Virgin Olive Oil
  • 1/4 cup Fresh Parsley, chopped
  • Juice of 1 Fresh Lemon
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Base: Drain and rinse the canned chickpeas and kidney beans in a colander.
  2. Chop Fresh Ingredients: Chop the cucumber, cherry tomatoes, and red onion.
  3. Combine the Ingredients: In a large mixing bowl, combine the drained chickpeas, kidney beans, chopped cucumber, cherry tomatoes, sliced red onion, and Kalamata olives.
  4. Dress the Salad: Drizzle extra virgin olive oil and lemon juice over the salad and season with salt and pepper.
  5. Add Fresh Herbs: Fold in the chopped parsley.
  6. Serve: Transfer the salad to a serving bowl or platter. Enjoy immediately or chill for 30 minutes to enhance flavors.
