- 3 medium-sized Sweet Potatoes, diced
- 6 large Eggs
- 1 cup Milk (or dairy-free alternative)
- 1 cup Cheddar Cheese, shredded (or vegan cheese)
- 2 cups Spinach, chopped
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Wash, peel, and dice the sweet potatoes into small cubes.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped onions and garlic, sautéing until translucent, about 5 minutes. Add chopped spinach and cook until wilted, about 2 minutes.
- In a bowl, beat the eggs and mix in the milk until well combined. Season with salt and pepper.
- In a large mixing bowl, combine the sautéed vegetables, diced sweet potatoes, shredded cheese, and egg mixture. Stir well.
- Pour the combined mixture into a greased casserole dish. Bake for 30-40 minutes or until the center is set.
- Let it cool for about 10 minutes before slicing.
Notes
Serve warm with Greek yogurt or crème fraîche and pair with fresh fruit or a light salad for a balanced meal.
