- 6 Eggs
- 4 Flour or Corn Tortillas (or Whole Wheat/Gluten-Free)
- 1 Bell Pepper (red or yellow)
- 1 Onion (sweet)
- 1 cup Cheddar Cheese (shredded)
- 1/2 cup Milk (or almond/oat milk)
- Salt to taste
- Pepper to taste
- 1 tsp Cumin or Chili Powder (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Dice the bell peppers and onions. Sauté in a skillet over medium heat for about 5-7 minutes until softened.
- In a large bowl, whisk together the eggs and milk. Add salt, pepper, and spices.
- Combine sautéed vegetables with the egg mixture and fold in torn tortillas and half of the cheese.
- Grease a baking dish, pour in the mixture, and top with remaining cheese.
- Bake for 30-35 minutes until the center is set and the top is lightly browned.
Notes
Can be served with salsa, avocado, or a light green salad. Feel free to customize with your favorite ingredients.
