Ingredients

  • 6 Eggs
  • 4 Flour or Corn Tortillas (or Whole Wheat/Gluten-Free)
  • 1 Bell Pepper (red or yellow)
  • 1 Onion (sweet)
  • 1 cup Cheddar Cheese (shredded)
  • 1/2 cup Milk (or almond/oat milk)
  • Salt to taste
  • Pepper to taste
  • 1 tsp Cumin or Chili Powder (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Dice the bell peppers and onions. Sauté in a skillet over medium heat for about 5-7 minutes until softened.
  3. In a large bowl, whisk together the eggs and milk. Add salt, pepper, and spices.
  4. Combine sautéed vegetables with the egg mixture and fold in torn tortillas and half of the cheese.
  5. Grease a baking dish, pour in the mixture, and top with remaining cheese.
  6. Bake for 30-35 minutes until the center is set and the top is lightly browned.

Notes

Can be served with salsa, avocado, or a light green salad. Feel free to customize with your favorite ingredients.
