- Egg Yolks, 3

Instructions
- Prepare the Béarnaise Sauce: Chop shallots, create infusion with vinegar and water, reduce, separate egg yolks, mix with heat, incorporate butter, and season.
- Prepare the Filet Mignon: Bring to room temperature, preheat grill, season steak, sear on medium-high heat for 4-5 minutes per side, rest, then plate and serve with Béarnaise sauce.
