Ingredients

  • 2 pounds beef short ribs
  • 2 sweet yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1 cup red wine (preferably Cabernet Sauvignon)
  • 1 cup grated Gruyère cheese
  • 1 crusty baguette, sliced
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the Ingredients: Gather and prep all ingredients.
  2. Caramelize the Onions: Melt butter in a pot, add onions and cook for 35-45 minutes until golden brown.
  3. Sear the Short Ribs: Increase heat, sear short ribs on each side for 3-4 minutes until browned.
  4. Deglaze the Pot: Remove short ribs, pour in red wine, and scrape the fond for 2-3 minutes.
  5. Combine Ingredients: Return onions and short ribs to pot, add broth, garlic, thyme, and bay leaves. Bring to a boil, then simmer for 2 hours.
  6. Prepare Gruyère Toast: Preheat oven to 400°F (200°C), slice baguette, top with cheese, and toast for 5-7 minutes.
  7. Serve: Remove bay leaves and thyme, serve soup hot with Gruyère toast.

Notes

For a vegetarian version, substitute short ribs with mushrooms and use vegetable broth.
