- 2 pounds beef short ribs
- 2 sweet yellow onions, thinly sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 2 bay leaves
- 1 cup red wine (preferably Cabernet Sauvignon)
- 1 cup grated Gruyère cheese
- 1 crusty baguette, sliced
- 2 tablespoons unsalted butter
Instructions
- Prepare the Ingredients: Gather and prep all ingredients.
- Caramelize the Onions: Melt butter in a pot, add onions and cook for 35-45 minutes until golden brown.
- Sear the Short Ribs: Increase heat, sear short ribs on each side for 3-4 minutes until browned.
- Deglaze the Pot: Remove short ribs, pour in red wine, and scrape the fond for 2-3 minutes.
- Combine Ingredients: Return onions and short ribs to pot, add broth, garlic, thyme, and bay leaves. Bring to a boil, then simmer for 2 hours.
- Prepare Gruyère Toast: Preheat oven to 400°F (200°C), slice baguette, top with cheese, and toast for 5-7 minutes.
- Serve: Remove bay leaves and thyme, serve soup hot with Gruyère toast.
Notes
For a vegetarian version, substitute short ribs with mushrooms and use vegetable broth.
