Ingredients

  • 1 small red onion, thinly sliced
  • 1 medium cucumber, diced
  • 1 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash tomatoes and cucumber thoroughly, checking for blemishes.
  2. Dice the tomatoes into bite-sized pieces.
  3. Mince the garlic cloves finely.
  4. Thinly slice the red onion and soak in cold water for 10-15 minutes if desired.
  5. In a large bowl, combine the diced tomatoes, cucumber, minced garlic, sliced red onion, and chopped basil. Toss gently.
  6. In a small bowl, whisk together the olive oil and red wine vinegar, then drizzle over the salad. Season with salt and pepper.
  7. Gently toss the salad again to coat everything well with the dressing.
