Description
This Strawberry and Blueberry Bruschetta is the ultimate summer appetizer—light, refreshing, and ready in minutes. With toasted baguette slices topped with creamy cheese, juicy berries, and a drizzle of honey, it’s a dish that looks elegant but is surprisingly simple. Perfect for BBQs, parties, or even a quick afternoon snack.
Ingredients
1 baguette (sliced into ½-inch rounds)
2 tablespoons butter or olive oil (for brushing bread)
1 cup fresh strawberries, diced
1 cup fresh blueberries
4 oz cream cheese (or mascarpone)
2–3 tablespoons honey (plus extra for drizzling)
Fresh mint leaves (optional, for garnish)
Instructions
Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Brush lightly with olive oil or butter.
Toast bread for 7–9 minutes, flipping once, until golden and crisp.
In a small bowl, combine diced strawberries and blueberries. If desired, add a small drizzle of honey to enhance sweetness.
Spread a thin layer of cream cheese (or mascarpone) on each toasted baguette slice.
Spoon the berry mixture evenly over each slice.
Drizzle with honey and garnish with fresh mint leaves.
Serve immediately while the bread is still slightly warm and crisp.
Notes
Best served fresh—assemble right before serving to keep bread from getting soggy.
Swap cream cheese with ricotta, mascarpone, or goat cheese for different flavors.
Try adding a sprinkle of lemon zest or a drizzle of balsamic glaze for an elegant finish.
Toasted bread and berry topping can be prepped ahead, but keep them separate until ready to serve
