Description

This Fresh Zucchini Quiche with Feta and Mint is light, creamy, and full of flavor. Perfect for brunch, lunch, or dinner, it combines garden-fresh zucchini, tangy feta, and refreshing mint in a buttery crust. Easy to make and freezer-friendly!

For the Quiche Filling:

2 medium zucchinis, grated or thinly sliced (excess water squeezed out)

1 cup crumbled feta cheese

2 tablespoons fresh mint, chopped

4 large eggs

1 cup heavy cream (or half-and-half for lighter texture)

½ cup milk

Salt and black pepper, to taste

1 tablespoon olive oil (for sautéing zucchini)

For the Crust:

1 single pie crust (homemade or store-bought)


Instructions

Preheat oven to 375°F (190°C). Fit pie crust into a 9-inch pie dish, trim edges, and prick the base with a fork. Blind bake for 8 minutes for a crispier crust.

Grate or thinly slice the zucchini, sprinkle with a little salt, and let sit for 10 minutes. Squeeze out excess water with a clean towel.

Heat olive oil in a skillet and sauté zucchini for 3–4 minutes until softened. Remove from heat and cool slightly.

In a bowl, whisk together eggs, cream, milk, salt, and pepper until smooth.

Spread zucchini evenly over the pie crust. Sprinkle feta and fresh mint on top.

Pour custard mixture over filling and let it settle evenly.

Bake for 35–40 minutes, or until the quiche is set and golden on top.

Let cool for 10 minutes before slicing. Serve warm, room temperature, or chilled

Notes

Crustless Option: Skip the crust for a lighter, gluten-free version. Just grease the pan well.

Cheese Variations: Try goat cheese or mozzarella instead of feta.

Storage: Refrigerate leftovers for up to 3 days. Freeze baked slices for up to 2 months.
