Ingredients

  • 6 Fresh High-Quality Eggs
  • 1/2 lb Medium or Large Shrimp
  • 1/4 cup Mayonnaise or Greek Yogurt
  • 1 tbsp Dijon Mustard
  • 1 tbsp Fresh Lemon Juice
  • 1 tsp Paprika
  • Salt and Pepper to taste
  • 2 Green Onions, chopped
  • 1/2 cup Bread Crumbs
  • 1/4 cup Cooking Oil for frying

Instructions

  1. Prepare the Eggs: Hard-boil the eggs, cool them in an ice bath, and peel.
  2. Fry the Shrimp: Coat shrimp in bread crumbs and fry until golden brown.
  3. Make the Filling: Mix egg yolks with mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  4. Combine Shrimp with the Filling: Add chopped shrimp to the yolk mixture.
  5. Fill the Egg Whites: Spoon the filling back into the egg whites and garnish as desired.
  6. Chill and Serve: Refrigerate before serving to enhance flavor.
