- 6 Fresh High-Quality Eggs
- 1/2 lb Medium or Large Shrimp
- 1/4 cup Mayonnaise or Greek Yogurt
- 1 tbsp Dijon Mustard
- 1 tbsp Fresh Lemon Juice
- 1 tsp Paprika
- Salt and Pepper to taste
- 2 Green Onions, chopped
- 1/2 cup Bread Crumbs
- 1/4 cup Cooking Oil for frying
Instructions
- Prepare the Eggs: Hard-boil the eggs, cool them in an ice bath, and peel.
- Fry the Shrimp: Coat shrimp in bread crumbs and fry until golden brown.
- Make the Filling: Mix egg yolks with mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Combine Shrimp with the Filling: Add chopped shrimp to the yolk mixture.
- Fill the Egg Whites: Spoon the filling back into the egg whites and garnish as desired.
- Chill and Serve: Refrigerate before serving to enhance flavor.
