- 3/4 cup unsweetened cocoa powder
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup melted butter (or vegan butter)
- 2 large eggs (or chia/flax eggs)
- 2 teaspoons vanilla extract
- 1 cup pitted and chopped cherries (fresh or frozen)
- 1 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, cocoa powder, brown sugar, granulated sugar, and a pinch of salt.
- In another bowl, whisk together the melted butter, eggs, and vanilla extract until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Gently fold in the chopped cherries and chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes until soft and slightly underbaked in the center.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a lower-carb option, substitute almond flour. You can also use applesauce instead of butter for a low-fat version.
