Description

A refreshing and probiotic-rich snack made by pickling cucumbers with garlic and dill.


Ingredients

  • Fresh cucumbers (pickling, English, or Persian)
  • Fresh garlic cloves
  • Fresh dill weed
  • Filtered water
  • White vinegar or apple cider vinegar
  • Kosher salt or sea salt
  • Sugar (or honey/agave)

Instructions

  1. Wash cucumbers thoroughly under running water and slice into quarters or half-moons.
  2. In a medium saucepan, combine equal parts vinegar and water (typically 1 cup of each), add 1 tablespoon of salt and 1 tablespoon of sugar. Heat over medium until dissolved.
  3. Add minced garlic cloves and fresh dill to the brine, simmer for a few minutes to infuse flavors.
  4. Pack sliced cucumbers tightly in a clean glass jar and pour the hot brine over them until submerged.
  5. Seal the jar with a lid, cool to room temperature, and refrigerate for at least 24 hours before enjoying.

Be patient while chilling the pickles to allow flavors to meld for the best taste.
