Description

Ingredients

  • 1 onion (finely grated)
  • 2 eggs (free-range)
  • 1/4 cup all-purpose flour (or almond flour for gluten-free)
  • Salt and pepper to taste
  • Vegetable oil (for frying)

Instructions

  1. Prepare the Potatoes: Peel and grate the potatoes, soak them in cold water for 10 minutes, then drain and pat dry.
  2. Mix the Ingredients: In a large bowl, combine the grated potatoes and onion, then add eggs, flour, salt, and pepper, mixing until just combined.
  3. Heat the Oil: In a skillet, heat about 1/4 inch of oil over medium-high heat until hot.
  4. Fry the Pancakes: Drop spoonfuls of the mixture into the hot oil, flattening them slightly and frying until golden brown, about 3-4 minutes per side.
  5. Drain and Serve: Transfer cooked pancakes onto paper towels to absorb excess oil and serve hot with applesauce or sour cream.

Notes

For a vegan version, use flaxseed meal instead of eggs. Store leftovers in the fridge for up to three days, or freeze for up to two months.
