A healthy and flavorful meal featuring Greek chicken meatballs served with lemony orzo.
Ingredients

- 1 lb Ground Chicken
- 1/2 cup Whole Wheat Bread Crumbs
- 1 Fine Chopped Onion
- 2 cloves Garlic, minced
- 1 Egg
- 1/2 cup Feta Cheese, crumbled
- 1 tsp Oregano
- Salt, to taste
- Pepper, to taste
- 1 Lemon Zest
- 1 cup Orzo
Instructions
- In a large mixing bowl, combine ground chicken, onion, garlic, bread crumbs, egg, feta, oregano, salt, pepper, and lemon zest. Mix gently.
- Scoop mixture using a tablespoon and roll into golf ball-sized meatballs. Place on a parchment-lined baking sheet.
- Preheat oven to 400°F (200°C) and bake meatballs for 20-25 minutes until golden and cooked through.
- Meanwhile, boil salted water and cook orzo according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a pan, warm olive oil, add cooked orzo, lemon juice, and zest. Plate orzo and top with meatballs. Garnish with fresh herbs or extra feta.
Notes
Substituting ground turkey or using gluten-free breadcrumbs are good alternatives for this recipe. Serve with a side salad or tzatziki sauce.
