  • 1/2 cup ground almonds (or finely ground oats)
  • 3 large eggs (or flaxseed meal mixed with water as a vegan alternative)
  • 1 cup honey (preferably raw)
  • 1/2 cup milk (or plant-based milk)
  • 1/2 cup olive oil (or melted coconut oil or avocado oil)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with olive oil.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, and ground almonds.
  3. In another bowl, beat the eggs until frothy, then gradually add the honey while mixing.
  4. Stir in the olive oil and milk into the egg-honey mixture until well combined.
  5. Gradually add the dry ingredients to the wet mixture, gently folding to avoid overmixing.
  6. Pour the batter into the prepared cake pan and bake for 40–45 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.

Notes

Serve plain, dusted with powdered sugar, or with Greek yogurt for added creaminess.
