- 1/2 cup ground almonds (or finely ground oats)
- 3 large eggs (or flaxseed meal mixed with water as a vegan alternative)
- 1 cup honey (preferably raw)
- 1/2 cup milk (or plant-based milk)
- 1/2 cup olive oil (or melted coconut oil or avocado oil)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with olive oil.
- In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, and ground almonds.
- In another bowl, beat the eggs until frothy, then gradually add the honey while mixing.
- Stir in the olive oil and milk into the egg-honey mixture until well combined.
- Gradually add the dry ingredients to the wet mixture, gently folding to avoid overmixing.
- Pour the batter into the prepared cake pan and bake for 40–45 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.
Notes
Serve plain, dusted with powdered sugar, or with Greek yogurt for added creaminess.
