Description

Delicious and hearty Greek stuffed onions filled with flavorful ground meat, rice, and fresh herbs, perfect for a comforting Mediterranean meal.


Ingredients

  • Large Onions
  • Ground Meat (lamb, beef, turkey, or chicken)
  • Long-grain Rice
  • Tomato Paste
  • Fresh Herbs (dill and parsley)
  • Olive Oil
  • Salt
  • Pepper
  • Feta Cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and cook the onions in boiling water for 10-15 minutes until partially soft.
  2. In a large frying pan, heat olive oil over medium heat and brown the ground meat. Add cooked rice, tomato paste, herbs, salt, and pepper, cooking for another 5 minutes.
  3. Remove the center layers of the onions to create hollow spaces and fill each with the meat and rice mixture.
  4. Place the stuffed onions upright in a baking dish, drizzle with olive oil, add water to the dish, cover with foil, and bake for approximately 45 minutes, uncovering for the last 15 minutes.

Notes

For a healthier version, use ground turkey or chicken, and consider swapping rice for quinoa.
