- 1 cup Greek yogurt
- 8 oz cream cheese
- ¼ cup fresh lime juice
- 2 tsp lime zest
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter (melted)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine crushed graham crackers and melted butter. Press into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes in the preheated oven.
- In a mixing bowl, blend cream cheese and Greek yogurt until creamy. Add sugar, eggs, lime juice, lime zest, and vanilla extract, then beat until smooth.
- Pour the filling mixture over the pre-baked crust.
- Bake the cheesecake for 30-40 minutes until edges are set, and the center jiggles slightly.
- Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour before refrigerating for at least 3 hours to set.
Notes
To achieve the best texture, use room temperature ingredients and avoid overbaking. Garnish with fresh fruits or whipped cream when serving.
