Description

A refreshing twist on classic cheesecake, using Greek yogurt for a lighter, tangy flavor and increased protein content.


Ingredients

  • 1 cup Greek yogurt
  • 8 oz cream cheese
  • ¼ cup fresh lime juice
  • 2 tsp lime zest
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine crushed graham crackers and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes in the preheated oven.
  4. In a mixing bowl, blend cream cheese and Greek yogurt until creamy. Add sugar, eggs, lime juice, lime zest, and vanilla extract, then beat until smooth.
  5. Pour the filling mixture over the pre-baked crust.
  6. Bake the cheesecake for 30-40 minutes until edges are set, and the center jiggles slightly.
  7. Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour before refrigerating for at least 3 hours to set.

Notes

To achieve the best texture, use room temperature ingredients and avoid overbaking. Garnish with fresh fruits or whipped cream when serving.
