Ingredients

  • 1 cup green olives (Kalamata or Castelvetrano)
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable stock
  • 2 medium potatoes, diced
  • 2 tablespoons lemon juice
  • Fresh herbs (basil or parsley) for garnish
  • 2 tablespoons extra virgin olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent (about 5 minutes).
  2. Stir in diced potatoes and mix with the aromatics for another 3-4 minutes.
  3. Add vegetable stock to the pot and bring to a boil. Reduce to a simmer and cook for about 15 minutes until potatoes are tender.
  4. Remove from heat, add green olives and lemon juice. Blend the soup until smooth using an immersion blender.
  5. Adjust seasoning with salt and pepper, serve hot garnished with fresh herbs and a drizzle of olive oil.

Notes

To lighten the soup, substitute potatoes with cauliflower. For a lower-fat version, sauté using vegetable broth instead of olive oil.
