- 1 cup green olives (Kalamata or Castelvetrano)
- 3 cloves garlic, minced
- 1 onion, chopped
- 4 cups vegetable stock
- 2 medium potatoes, diced
- 2 tablespoons lemon juice
- Fresh herbs (basil or parsley) for garnish
- 2 tablespoons extra virgin olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent (about 5 minutes).
- Stir in diced potatoes and mix with the aromatics for another 3-4 minutes.
- Add vegetable stock to the pot and bring to a boil. Reduce to a simmer and cook for about 15 minutes until potatoes are tender.
- Remove from heat, add green olives and lemon juice. Blend the soup until smooth using an immersion blender.
- Adjust seasoning with salt and pepper, serve hot garnished with fresh herbs and a drizzle of olive oil.
Notes
To lighten the soup, substitute potatoes with cauliflower. For a lower-fat version, sauté using vegetable broth instead of olive oil.
