  • 2 cups dumpling dough

  • 2 celery stalks, chopped
  • 4 cups beef or chicken broth
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Fresh parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, heat a splash of oil over medium heat. Sauté the diced onions and minced garlic until translucent and fragrant, about 3-5 minutes.
  2. Add the ground beef, breaking it up with a spatula, and cook until browned, about 6-8 minutes.
  3. Stir in the chopped carrots and celery, cooking for an additional 3-4 minutes. Pour in the broth and add seasonings.
  4. Prepare the dumpling dough, roll out, and cut into squares or circles.
  5. Once the broth is simmering, drop in the dumplings, cover, and steam for 15-20 minutes until fluffy.
  6. Adjust seasoning if necessary and garnish with fresh parsley before serving.
