Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 large onion, finely chopped
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup cooked brown rice or quinoa
  • 1 cup diced tomatoes
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sliced cucumbers
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion. Sauté for 3-5 minutes or until the onions are translucent and fragrant.
  2. Add the ground chicken to the skillet, breaking it apart with a wooden spoon. Season with salt, pepper, oregano, and cumin, and cook for about 7-10 minutes until no longer pink.
  3. Stir in the diced tomatoes and let simmer for an additional 5 minutes.
  4. Cook the brown rice or quinoa according to package instructions.
  5. Divide the cooked rice or quinoa into serving bowls. Top with the ground chicken mixture, sprinkle with crumbled feta cheese, and add sliced cucumbers.
  6. Garnish with fresh parsley and serve immediately while hot.

Serve with tzatziki or additional toppings like kalamata olives and bell pepper strips for extra flavor.
