- 1 cup Coconut Cream
- 8 oz Low-Fat Cream Cheese
- 1 cup Greek Yogurt
- 1 cup Fresh Strawberries, diced
- 2 tbsp Fresh Lemon Juice
- 2 tbsp Honey or Maple Syrup
- 1 cup Graham Cracker Crumbs
- 1 tsp Vanilla Extract
Instructions
- Prepare the cheesecake mixture by combining coconut cream, low-fat cream cheese, Greek yogurt, lemon juice, honey or maple syrup, and vanilla extract in a mixing bowl. Beat until smooth and creamy.
- In a separate bowl, mash half of the strawberries with a fork, leaving some chunks. Fold the mashed strawberries into the cheesecake mixture.
- Assemble the jars by layering graham cracker crumbs, cheesecake mixture, and diced strawberries until filled.
- Cover and chill in the refrigerator for at least 2 hours to allow the cheesecake to set.
- Before serving, top with additional strawberry slices and mint for decoration.
Notes
For a vegan option, substitute low-fat cream cheese with cashew cream and Greek yogurt with coconut whipped topping.
