Ingredients

  • 1 cup Coconut Cream
  • 8 oz Low-Fat Cream Cheese
  • 1 cup Greek Yogurt
  • 1 cup Fresh Strawberries, diced
  • 2 tbsp Fresh Lemon Juice
  • 2 tbsp Honey or Maple Syrup
  • 1 cup Graham Cracker Crumbs
  • 1 tsp Vanilla Extract

Instructions

  1. Prepare the cheesecake mixture by combining coconut cream, low-fat cream cheese, Greek yogurt, lemon juice, honey or maple syrup, and vanilla extract in a mixing bowl. Beat until smooth and creamy.
  2. In a separate bowl, mash half of the strawberries with a fork, leaving some chunks. Fold the mashed strawberries into the cheesecake mixture.
  3. Assemble the jars by layering graham cracker crumbs, cheesecake mixture, and diced strawberries until filled.
  4. Cover and chill in the refrigerator for at least 2 hours to allow the cheesecake to set.
  5. Before serving, top with additional strawberry slices and mint for decoration.

Notes

For a vegan option, substitute low-fat cream cheese with cashew cream and Greek yogurt with coconut whipped topping.
