Ingredients

  • 1 Butternut Squash, peeled, seeded, and diced into 1-inch cubes
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 Onion, chopped
  • 1 cup Chicken or Vegetable Broth
  • 1 cup Cheese (optional, sharp cheddar recommended)
  • 1 cup Breadcrumbs (Panko preferred)

Instructions

  1. Prepare the butternut squash by peeling, seeding, and dicing into 1-inch cubes.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, cooking until translucent.
  3. Add the diced butternut squash and broth, stirring to combine. Season with salt and pepper.
  4. Transfer the mixture to a greased baking dish, spreading it evenly.
  5. If using cheese, sprinkle over the top, then add a layer of breadcrumbs.
  6. Bake in a preheated oven at 375°F (190°C) for 30-40 minutes, or until tender and golden brown.
  7. Cool for 5-10 minutes before serving.
