Description

Indulge in these rich and flavorful homemade raspberry truffles that combine fresh raspberries with dark chocolate for a guilt-free dessert.


Ingredients

Scale
  • 1 cup Fresh Raspberries
  • 200g Dark Chocolate (at least 60% cocoa)
  • 1/2 cup Heavy Cream
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 tsp Vanilla Extract

Instructions

  1. Rinse the fresh raspberries gently and pat them dry with a kitchen towel.
  2. In a saucepan, heat the heavy cream over medium heat until simmering, then pour over the chopped dark chocolate and stir until smooth.
  3. Gently fold in the raspberries into the ganache mixture.
  4. Cover and refrigerate the mixture for at least 3 hours until firm.
  5. Scoop out portions of the ganache and roll them into balls.
  6. Roll the truffles in unsweetened cocoa powder until fully coated.
  7. Refrigerate the coated truffles for an additional 30 minutes before serving.

Notes

For a dairy-free version, use coconut cream and vegan chocolate.
