- 1 cup Fresh Raspberries
- 200g Dark Chocolate (at least 60% cocoa)
- 1/2 cup Heavy Cream
- 1/4 cup Unsweetened Cocoa Powder
- 1 tsp Vanilla Extract
Instructions
- Rinse the fresh raspberries gently and pat them dry with a kitchen towel.
- In a saucepan, heat the heavy cream over medium heat until simmering, then pour over the chopped dark chocolate and stir until smooth.
- Gently fold in the raspberries into the ganache mixture.
- Cover and refrigerate the mixture for at least 3 hours until firm.
- Scoop out portions of the ganache and roll them into balls.
- Roll the truffles in unsweetened cocoa powder until fully coated.
- Refrigerate the coated truffles for an additional 30 minutes before serving.
