23 tablespoons cornstarch

Salt and pepper to taste

3 garlic cloves, minced

1 teaspoon grated fresh ginger

1/4 cup honey

3 tablespoons soy sauce or tamari

1 tablespoon rice vinegar or apple cider vinegar

1 teaspoon sesame oil

12 tablespoons neutral oil

2 green onions, sliced

Sesame seeds (optional)


Instructions

  • Pat dry the chicken pieces with paper towels; season with salt and pepper, then toss with a light dusting of cornstarch until evenly coated.
  • Heat a large skillet over medium-high heat and add 1 tablespoon of neutral oil. Once shimmering, arrange the chicken in a single layer and sear until golden on the edges, about 2-3 minutes per side. Do not overcrowd; work in batches if needed. Transfer to a plate and set aside.
  • In the same skillet, add a touch more oil if needed and stir in minced garlic (and ginger, if using). Sauté about 30 seconds until fragrant and lightly golden.
  • Stir in honey, soy sauce, and vinegar to form the glossy sauce. Bring to a gentle simmer and let it bubble for about 1-2 minutes, until the edges start to thicken.
  • Return the chicken to the skillet and toss to coat in the glaze. Cook for 2-3 minutes more, until the sauce is glossy and the chicken is cooked through (internal temp 165°F / 74°C).
  • If the sauce needs to thicken further, whisk together 1 tablespoon cornstarch with 1 tablespoon water to create a slurry and stir it into the sauce. Simmer 1 minute until the glaze clings to the chicken.
  • Finish with a teaspoon of sesame oil, then taste and adjust with a pinch more soy or honey if needed.
  • Garnish with sliced green onions and sesame seeds. Serve hot over rice or with steamed veggies and enjoy the aroma of caramelized garlic and honey.
