Ingredients

  • 2 Boneless, Skinless Chicken Breasts
  • 1/4 cup Honey
  • 1/4 cup Fresh Lime Juice
  • 4 cloves Garlic, minced
  • 1/4 cup Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • 2 Bell Peppers, sliced
  • 1 Zucchini, sliced
  • Cilantro, for garnish

Instructions

  1. In a bowl, mix the honey, lime juice, minced garlic, olive oil, salt, and pepper. Add the chicken breast and marinate for at least 15 minutes.
  2. Preheat your grill or skillet to medium-high heat.
  3. Grill or sauté the chicken for about 6-7 minutes per side, until the internal temperature reaches 165°F (75°C).
  4. In the same skillet (or on the grill), toss vegetables with olive oil, salt, and pepper. Sauté or grill until slightly charred and tender, about 5-7 minutes.
  5. Slice the cooked chicken into thin strips and layer with vegetables on a plate to create a stack.
  6. Garnish with fresh cilantro and drizzle with extra honey or lime juice if desired.
