Description

A delightful dish that marries smooth, buttery potatoes with a flaky crust, embodying the heart and soul of Irish cuisine.

Ingredients

Scale
  • 2 pounds Potatoes (starchy varieties like Russets or Yukon Gold)
  • 4 tablespoons Unsalted Butter
  • 1 cup Milk (whole or plant-based)
  • 1 medium Onion (diced)
  • Salt (to taste)
  • Black Pepper (to taste)
  • 2 cups All-Purpose Flour
  • 1 large Egg (for egg wash)

Instructions

  1. Prepare the Potatoes: Peel and dice potatoes, boil in salted water until tender (15-20 minutes), then drain.
  2. Make the Filling: Mash drained potatoes, mix in butter and milk until smooth, then fold in onions, salt, and pepper.
  3. Prepare the Crust: Combine flour and salt, cut in butter, add cold water to form dough, wrap and chill for at least 30 minutes.
  4. Assemble the Pie: Preheat oven to 375°F (190°C). Roll out chilled dough, fill with potato mixture, cover with top crust, seal edges, and cut slits for steam.
  5. Bake the Pie: Brush with egg wash and bake for 30 minutes or until golden brown.

Notes

Use plant-based alternatives for a lighter version. Store leftovers in an airtight container for up to 3 days.
