Description

A classic Irish dish featuring a rich, cheesy sauce served over toasted bread, perfect for comfort and gatherings.


Ingredients

  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup Irish stout or lager
  • 1 tablespoon Dijon mustard
  • Few dashes of Worcestershire sauce
  • 1 cup whole milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Thick slices of hearty bread

Instructions

  1. Preheat your oven to 400°F (200°C) and lay out slices of bread on a baking tray to toast lightly.
  2. Melt 2 tablespoons of butter in a medium saucepan over medium heat, then whisk in 2 tablespoons of flour until it forms a roux.
  3. Gradually whisk in 1 cup of milk and 1/2 cup of beer, stirring until thickened (5-7 minutes).
  4. Add 1 cup of grated cheddar cheese and stir on low heat until melted.
  5. Mix in 1 tablespoon of mustard and Worcestershire sauce, adjusting salt and pepper to taste.
  6. Place toasted bread in an oven-safe dish, spoon the cheese mixture over, and bake for 5-10 minutes until bubbling and golden brown.

Notes

For a lighter version, substitute half of the cheddar cheese with Monterey Jack. Use gluten-free bread for a gluten-free option.
