- 1 cup sharp cheddar cheese, grated
- 1/2 cup Irish stout or lager
- 1 tablespoon Dijon mustard
- Few dashes of Worcestershire sauce
- 1 cup whole milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Thick slices of hearty bread
Instructions
- Preheat your oven to 400°F (200°C) and lay out slices of bread on a baking tray to toast lightly.
- Melt 2 tablespoons of butter in a medium saucepan over medium heat, then whisk in 2 tablespoons of flour until it forms a roux.
- Gradually whisk in 1 cup of milk and 1/2 cup of beer, stirring until thickened (5-7 minutes).
- Add 1 cup of grated cheddar cheese and stir on low heat until melted.
- Mix in 1 tablespoon of mustard and Worcestershire sauce, adjusting salt and pepper to taste.
- Place toasted bread in an oven-safe dish, spoon the cheese mixture over, and bake for 5-10 minutes until bubbling and golden brown.
Notes
For a lighter version, substitute half of the cheddar cheese with Monterey Jack. Use gluten-free bread for a gluten-free option.
