- 1.5 lbs boneless skinless chicken breasts
- 1/4 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 1/2 cup grated Pecorino Romano cheese
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a bowl, combine lemon juice, lemon zest, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix well. Add chicken breasts, ensuring they are well-coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper or grease it with olive oil.
- Remove chicken from marinade, letting excess liquid drip away. Place chicken on the baking sheet and sprinkle grated pecorino over each breast.
- Bake for 20-25 minutes until cooked through (internal temp of 165°F/75°C) and cheese is bubbly and golden brown.
- Allow the chicken to rest for 5 minutes, then garnish with fresh parsley and serve.
Notes
For the best results, marinate the chicken for at least 30 minutes. Serve with roasted vegetables or a salad.
