- 2 English Muffins, cut into bite-sized pieces
- 6 Eggs
- 1 cup Whole Milk (or dairy-free alternative)
- 6 oz Canadian Bacon, diced
- 1 cup Hollandaise Sauce
- 1 cup Cheddar Cheese, shredded
- 2 tbsp Fresh Chives, chopped
- Salt and pepper to taste
- Cayenne pepper (optional)
Instructions
- Split the English muffins and cut them into bite-sized pieces; place them in a greased baking dish.
- In a skillet, lightly brown the Canadian bacon until crisp; spread over muffin pieces.
- Whisk together eggs, milk, salt, and pepper; this will bind the casserole.
- Stir in half of the hollandaise sauce into the egg mixture.
- Pour the egg mixture over the muffins and bacon; press down gently.
- Sprinkle cheese over the top and bake in a preheated oven at 350°F (175°C) for about 40 minutes.
- Drizzle remaining hollandaise and garnish with chives before serving.
Notes
Optional: Substitute Canadian bacon with turkey bacon for a leaner option. Prepare the casserole the night before for convenience.
