Description

A gourmet-style Eggs Benedict casserole that’s simple to make, combining rich flavors of eggs, hollandaise sauce, and savory Canadian bacon.


Ingredients

  • 2 English Muffins, cut into bite-sized pieces
  • 6 Eggs
  • 1 cup Whole Milk (or dairy-free alternative)
  • 6 oz Canadian Bacon, diced
  • 1 cup Hollandaise Sauce
  • 1 cup Cheddar Cheese, shredded
  • 2 tbsp Fresh Chives, chopped
  • Salt and pepper to taste
  • Cayenne pepper (optional)

Instructions

  1. Split the English muffins and cut them into bite-sized pieces; place them in a greased baking dish.
  2. In a skillet, lightly brown the Canadian bacon until crisp; spread over muffin pieces.
  3. Whisk together eggs, milk, salt, and pepper; this will bind the casserole.
  4. Stir in half of the hollandaise sauce into the egg mixture.
  5. Pour the egg mixture over the muffins and bacon; press down gently.
  6. Sprinkle cheese over the top and bake in a preheated oven at 350°F (175°C) for about 40 minutes.
  7. Drizzle remaining hollandaise and garnish with chives before serving.

Notes

Optional: Substitute Canadian bacon with turkey bacon for a leaner option. Prepare the casserole the night before for convenience.
