Description

A gourmet Italian chicken meatloaf that’s a healthier alternative to traditional beef, perfect for weeknight dinners.


Ingredients

  • 1 lb Ground Chicken
  • 1 cup Italian Breadcrumbs
  • 1/2 cup Parmesan Cheese, grated
  • 2 Eggs
  • 1/4 cup Fresh Parsley, chopped
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • 1 Bell Pepper, chopped
  • 1 cup Tomato Sauce
  • 1 tbsp Italian Seasoning
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Olive Oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic until softened, about 5 minutes.
  3. In a large bowl, combine ground chicken, sautéed onions and garlic, breadcrumbs, parsley, eggs, and parmesan cheese. Mix gently.
  4. Fold in chopped bell pepper and other vegetables.
  5. Transfer the mixture to a loaf pan, shaping evenly or form it on a lined baking sheet.
  6. Spread tomato sauce over the top and sprinkle with additional parmesan if desired.
  7. Bake for 60 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let rest for 10 minutes before slicing.

Notes

For a vegan version, substitute eggs with flaxseed meal and use vegan cheese. Serve with roasted vegetables or a fresh salad.
