A gourmet Italian chicken meatloaf that’s a healthier alternative to traditional beef, perfect for weeknight dinners.

- 1 lb Ground Chicken
- 1 cup Italian Breadcrumbs
- 1/2 cup Parmesan Cheese, grated
- 2 Eggs
- 1/4 cup Fresh Parsley, chopped
- 2 cloves Garlic, minced
- 1 Onion, diced
- 1 Bell Pepper, chopped
- 1 cup Tomato Sauce
- 1 tbsp Italian Seasoning
- Salt to taste
- Pepper to taste
- 1 tbsp Olive Oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onion and garlic until softened, about 5 minutes.
- In a large bowl, combine ground chicken, sautéed onions and garlic, breadcrumbs, parsley, eggs, and parmesan cheese. Mix gently.
- Fold in chopped bell pepper and other vegetables.
- Transfer the mixture to a loaf pan, shaping evenly or form it on a lined baking sheet.
- Spread tomato sauce over the top and sprinkle with additional parmesan if desired.
- Bake for 60 minutes or until the internal temperature reaches 165°F (75°C).
- Let rest for 10 minutes before slicing.
Notes
For a vegan version, substitute eggs with flaxseed meal and use vegan cheese. Serve with roasted vegetables or a fresh salad.
