Description

Ingredients

  • 4 Fresh Eggs
  • 1 can Crushed Tomatoes
  • 2 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 tsp Red Pepper Flakes
  • 2 tbsp Olive Oil
  • Fresh Parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 5 minutes until translucent.
  2. Add the minced garlic and red pepper flakes, and cook for an additional minute until fragrant.
  3. Pour in the crushed tomatoes, season with salt and pepper. Bring to a gentle simmer for 10 minutes.
  4. Create small wells in the sauce and crack an egg into each. Cover and cook for 5-7 minutes until the whites are set but yolks remain runny.
  5. Garnish with chopped parsley and serve immediately with crusty bread.
