- 2 Chicken Breasts, skinless and boneless
- 1 cup Fresh Raspberries
- 1–2 Jalapeno Peppers, minced
- 2 tablespoons Honey
- 2 tablespoons Soy Sauce
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- Salt and Pepper to taste
- Fresh Cilantro for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat.
- Place the chicken breasts in the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
- In a bowl, combine raspberries, minced jalapenos, honey, soy sauce, and garlic to create the sauce.
- Pour the raspberry jalapeno sauce over the cooked chicken and simmer for 2-3 minutes.
- Garnish with fresh cilantro and serve hot.
Notes
For a milder flavor, remove jalapeno seeds. Serve over quinoa or rice to soak up the sauce.
