Description

A quick and delicious chicken dish glazed with a vibrant raspberry jalapeno sauce that combines sweet and spicy flavors.


Ingredients

  • 2 Chicken Breasts, skinless and boneless
  • 1 cup Fresh Raspberries
  • 12 Jalapeno Peppers, minced
  • 2 tablespoons Honey
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste
  • Fresh Cilantro for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Place the chicken breasts in the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
  4. In a bowl, combine raspberries, minced jalapenos, honey, soy sauce, and garlic to create the sauce.
  5. Pour the raspberry jalapeno sauce over the cooked chicken and simmer for 2-3 minutes.
  6. Garnish with fresh cilantro and serve hot.

Notes

For a milder flavor, remove jalapeno seeds. Serve over quinoa or rice to soak up the sauce.
