Description
These Jam Drops (Thumbprint Cookies) are buttery, golden, and filled with jewel-like jam centers. They’re the perfect mix of simple and impressive—great for holiday trays, gifting, or enjoying with a cup of tea.
Ingredients
1 cup (225g) unsalted butter, softened
½ cup (100g) white sugar
1 large egg, room temperature
1 tsp vanilla extract
2 cups (250g) all-purpose flour, scooped and leveled
½ tsp baking powder
¼ tsp salt
½ cup jam of your choice (raspberry, strawberry, apricot, etc.)
Instructions
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, cream butter and sugar until pale and fluffy (2–3 minutes).
Add egg and vanilla, beating until smooth.
In another bowl, whisk flour, baking powder, and salt. Gradually stir into wet ingredients until dough forms.
Roll dough into 1-inch balls and place on baking sheet, leaving space between.
Press a thumbprint (or back of a spoon) into the center of each ball.
Spoon about ½ teaspoon jam into each indent.
Bake for 12–15 minutes, until edges are lightly golden but tops are pale.
Cool on baking sheet for 5 minutes, then transfer to a wire rack to finish cooling.
Notes
For a festive look, use a mix of red and golden jams.
If jam is too thin, thicken it by gently simmering for a few minutes before filling.
Store cookies in an airtight container at room temperature for up to 5 days.
Freeze dough balls for up to 2 months; bake straight from freezer with an extra minute or two.
