- 2 cups sweet corn (fresh or frozen)
- 1/2 cup mozzarella cheese
- 1/2 cup cheddar cheese
- 2 tablespoons butter
- 1/4 cup mayonnaise
- 2 chopped green onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine sweet corn, mayonnaise, butter, chopped green onions, garlic powder, and salt and pepper. Stir until evenly coated.
- Fold in the mozzarella and cheddar cheese to the corn mixture.
- Spoon the mixture into a greased baking dish, spreading it evenly.
- Bake for about 15 minutes, or until bubbling and golden.
- Remove from the oven and let cool for a minute, then serve hot.
Notes
For a lighter version, substitute butter with olive oil and mayonnaise with Greek yogurt.
