- 1 cup lentils
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 medium carrot, diced
- 1 stalk celery, chopped
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 lemon, juiced
- 1 teaspoon cumin
- Salt and pepper, to taste
Instructions
- Rinse lentils under cold water to remove debris. Chop onion, garlic, carrot, and celery into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Stir in garlic and sauté for an additional minute.
- Add diced carrot and chopped celery, stirring for about 3-4 minutes.
- Add rinsed lentils and vegetable broth. Bring to a boil, then reduce to simmer.
- Add cumin, salt, and pepper. Simmer uncovered for about 20-25 minutes until lentils soften.
- (Optional) Blend the soup partially or fully with an immersion blender for a creamier texture.
- Once lentils are cooked, stir in lemon juice and adjust seasoning as necessary.
- Ladle soup into bowls, garnish with fresh parsley, and serve warm.
Notes
For a richer flavor, simmer longer. Add optional toppings like feta or yogurt for extra creaminess.
