Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 stalk celery, chopped
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 lemon, juiced
  • 1 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Rinse lentils under cold water to remove debris. Chop onion, garlic, carrot, and celery into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Stir in garlic and sauté for an additional minute.
  3. Add diced carrot and chopped celery, stirring for about 3-4 minutes.
  4. Add rinsed lentils and vegetable broth. Bring to a boil, then reduce to simmer.
  5. Add cumin, salt, and pepper. Simmer uncovered for about 20-25 minutes until lentils soften.
  6. (Optional) Blend the soup partially or fully with an immersion blender for a creamier texture.
  7. Once lentils are cooked, stir in lemon juice and adjust seasoning as necessary.
  8. Ladle soup into bowls, garnish with fresh parsley, and serve warm.

Notes
