A rich and creamy cheesecake inspired by the London Fog tea blend, featuring earl grey flavors and the tartness of blackberries.


Ingredients

  • 16 oz Cream Cheese
  • 1 cup Greek Yogurt
  • 3/4 cup Granulated Sugar
  • 3 Eggs
  • 1 tsp Vanilla Extract
  • 2 tbsp Earl Grey Tea (loose leaf or bags)
  • 1 cup Blackberries
  • 2 tbsp Unsalted Butter (for greasing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a 9-inch springform pan with butter and line the bottom with parchment paper.
  3. In a mixing bowl, combine cream cheese and sugar, mixing until smooth.
  4. Add Greek yogurt, mixing well, then incorporate the eggs one at a time.
  5. Steep Earl Grey tea in hot water, then cool and add it with vanilla extract to the batter.
  6. Fold in blackberries gently, reserving some for garnish.
  7. Pour the batter into the prepared pan and bake for 50 minutes, until edges are set.
  8. Cool in the oven for 15 minutes, then refrigerate for at least 4 hours or overnight before serving.
