- 2 cups Navy Beans (or Great Northern Beans)
- 1/2 cup Maple Syrup
- 1/4 cup Unsalted Butter (or coconut oil for dairy-free)
- 1 medium Onion (diced)
- 3 cloves Garlic (minced)
- 1 teaspoon Mustard Powder
- 1 teaspoon Black Pepper
- Salt to taste
Instructions
- Preheat your oven to 325°F (163°C).
- If using dried beans, soak them overnight in water. Drain and rinse. If using canned beans, drain and rinse.
- Melt the unsalted butter in a skillet over medium heat. Add diced onion and minced garlic, cooking until soft and fragrant, about 5 minutes.
- In a mixing bowl, combine the soaked or canned beans, sautéed onions and garlic, maple syrup, mustard powder, salt, and black pepper. Mix well.
- Transfer the bean mixture to a baking dish, cover with aluminum foil, and bake for about 60 to 75 minutes. Remove the foil in the last 15 minutes.
- Check for doneness; beans should be tender. If needed, cover and bake longer.
- Let cool for a few minutes before serving.
