- 1 lb Carrots, peeled and sliced into 1-inch pieces
- 2 Apples, cored and chopped (Honeycrisp or Fuji recommended)
- 1/4 cup Maple Syrup
- 2 tbsp Dijon Mustard
- 2 tbsp Olive Oil
- Salt, to taste
- Fresh Pepper, to taste
- Fresh Herbs (Thyme or Rosemary), optional
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and prepare vegetables: peel and slice carrots, core and chop apples.
- In a large bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Add carrots and apples to the bowl, tossing until evenly coated.
- Spread the mixture on a lined baking sheet in a single layer and roast for about 30 minutes, stirring halfway through.
- Remove from the oven and garnish with fresh herbs if desired. Serve warm.
Notes
To reduce sugar content, adjust the amount of maple syrup or use a sugar substitute. For oil-free roasting, use vegetable broth instead.
