Instructions
- Prepare the Vegetables: Wash the cucumbers, onions, and tomatoes thoroughly under cool running water.
- Slice the Ingredients: Slice the cucumbers into thin rounds, chop the onions into thin wedges, and halve or quarter the tomatoes.
- Make the Marinade: In a bowl, whisk together the apple cider vinegar, olive oil, minced garlic, sugar or honey, salt, and pepper.
- Combine and Marinate: In a large mixing bowl, combine the sliced cucumbers, onions, and tomatoes. Pour the marinade over the vegetables and toss to coat evenly.
- Let It Marinate: Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.
- Garnish and Serve: Before serving, sprinkle with fresh dill and give it a final toss. Enjoy chilled.
Notes
For a milder onion flavor, soak chopped onions in cold water for 10 minutes before using. This recipe is versatile; feel free to experiment with additional vegetables.
