Description

Transform ordinary salads with these flavorful marinated tomatoes, perfect for summer meals.


Ingredients

  • 2 cups ripe tomatoes, sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 cup fresh basil leaves
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the tomatoes by washing and slicing them into wedges or rounds.
  2. In a mixing bowl, combine the sliced tomatoes with minced garlic, red wine vinegar, olive oil, fresh basil, and red pepper flakes. Season with salt and pepper to taste.
  3. Gently toss all the ingredients ensuring the tomatoes are well-coated. Cover the bowl and let the tomatoes marinate for at least 30 minutes.
  4. Serve the marinated tomatoes on salads, toasted bread, or as a topping for grilled meats.

Notes

Store leftovers in a sealed container in the fridge for up to three days. Marinating too long can turn tomatoes mushy – aim for 30 minutes to a few hours.
