Ingredients

- 2 cups ripe tomatoes, sliced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1/4 cup fresh basil leaves
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare the tomatoes by washing and slicing them into wedges or rounds.
- In a mixing bowl, combine the sliced tomatoes with minced garlic, red wine vinegar, olive oil, fresh basil, and red pepper flakes. Season with salt and pepper to taste.
- Gently toss all the ingredients ensuring the tomatoes are well-coated. Cover the bowl and let the tomatoes marinate for at least 30 minutes.
- Serve the marinated tomatoes on salads, toasted bread, or as a topping for grilled meats.
Notes
Store leftovers in a sealed container in the fridge for up to three days. Marinating too long can turn tomatoes mushy – aim for 30 minutes to a few hours.
