A vibrant and nutritious salad that celebrates Mediterranean flavors with fresh vegetables and a tangy marinade.


Ingredients

  • 1 head of Cauliflower, cut into small florets
  • 1/4 cup Extra Virgin Olive Oil
  • 3 tablespoons Red Wine Vinegar
  • 2 cloves Garlic, minced
  • 1 cup Cherry Tomatoes, halved
  • 1/2 Red Onion, thinly sliced
  • 1 Cucumber, diced
  • 1/4 cup Fresh Parsley, chopped
  • 1/2 cup Feta Cheese, crumbled
  • Salt and Pepper to taste

Instructions

  1. Prepare the cauliflower by removing leaves and stem, cutting it into small florets.
  2. Blanch the cauliflower in boiling salted water for 2-3 minutes. Drain and plunge into ice water.
  3. In a bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and pepper.
  4. In a large bowl, combine blanched cauliflower, cherry tomatoes, red onion, cucumber, and parsley. Pour the marinade over and toss gently.
  5. Sprinkle crumbled feta over the salad and toss again without breaking the cheese too much.
  6. Refrigerate for at least 30 minutes to let the flavors meld before serving.

Notes

For a vegan option, substitute feta with a plant-based version or omit it completely. Feel free to add olives or nuts for extra flavor.
