Instructions
Preheat your oven to 400°F (205°C). Line a baking sheet with parchment and have a rolling pin ready.
Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté the shallot for 2–3 minutes until translucent, then add the mushrooms. Cook until they release their moisture and the pan is nearly dry, 6–8 minutes. Stir in the garlic and thyme, season with salt and pepper, and cook 1 minute more. Set aside to cool slightly.
In a small bowl, blend the goat cheese with the cream cheese (if using) and a pinch of salt. This creates a creamy, spreadable base.
Roll the puff pastry into a neat rectangle on a lightly floured surface or on the parchment itself. Aim for about 12×9 inches. Lightly score a 1-inch border around the edges to guide your braiding.
