- 4 Chicken Thighs
- 1/4 cup Balsamic Vinegar
- 2 tablespoons Honey
- 4 cloves Garlic, minced
- 2 tablespoons Olive Oil
- 1 cup Cherry Tomatoes, halved
- 2 cups Spinach
- Salt and Pepper, to taste
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a large pan, heat olive oil over medium-high heat and sauté the chicken thighs until golden brown, about 5-7 minutes per side.
- Add minced garlic and sauté for about 30 seconds.
- Whisk together balsamic vinegar and honey, then pour into the pan and cook until bubbly.
- Add cherry tomatoes and cook for an additional 5 minutes.
- Fold in spinach and cook until wilted, about 2-3 minutes.
- Remove from heat, drizzle with leftover balsamic sauce, plate, and serve warm.
