One-Pan Balsamic Chicken

Description

A quick and flavorful one-pan meal featuring marinated chicken breasts with a tangy balsamic glaze, cherry tomatoes, and green beans.


Ingredients

  • 4 Boneless skinless chicken breasts
  • 1/2 cup Balsamic vinegar
  • 2 tbsp Honey
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 2 sprigs Fresh rosemary, chopped
  • 1 cup Cherry tomatoes
  • 2 cups Green beans

Instructions

  1. In a bowl, whisk together balsamic vinegar, honey, minced garlic, olive oil, and chopped rosemary to create the marinade.
  2. Place chicken breasts in a zip-top bag or shallow dish, pour the marinade over, and marinate for at least 20 minutes.
  3. Heat a large skillet over medium heat until hot.
  4. Add the marinated chicken to the skillet, reserving the leftover marinade, and sear for about 5 minutes on each side until browned.
  5. Add cherry tomatoes and green beans to the skillet, pour in the reserved marinade, and stir gently.
  6. Cover the skillet and reduce heat, simmering for about 10 minutes until the chicken is cooked through and the veggies are tender.
  7. Let the dish rest for a couple of minutes before slicing and serving from the pan.

Notes

For best flavor, marinade the chicken for up to two hours. Serve over quinoa or brown rice.
