This One Pot Chicken Parmesan Pasta is the ultimate comfort food—cheesy, saucy, and full of flavor, all made in just one pot. Perfect for busy weeknights, this dish combines tender chicken, pasta, marinara, and melty cheese in under 30 minutes with minimal cleanup.
Ingredients
1 lb chicken breast, cut into bite-sized pieces
2 tbsp olive oil
3 cloves garlic, minced
1 small onion, diced
12 oz uncooked pasta (penne or rotini work best)
3 cups chicken broth
2 cups marinara sauce
1 tsp Italian seasoning
Salt & black pepper, to taste
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh basil or parsley, for garnish
Instructions
Heat olive oil in a large pot over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown (about 4–5 minutes).
Add onion and garlic; sauté for 2–3 minutes until softened and fragrant.
Stir in uncooked pasta, chicken broth, marinara, and Italian seasoning. Mix well.
Bring to a boil, then reduce the heat. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
Stir in half the mozzarella and all the Parmesan until creamy.
Sprinkle remaining mozzarella on top, cover, and let melt for 2–3 minutes.
Garnish with fresh basil or parsley and serve hot.
Notes
Use chicken thighs instead of breasts for a juicier result.
Add spinach, zucchini, or mushrooms for extra veggies.
For a baked finish, broil the pasta with extra mozzarella for 2–3 minutes.
Store leftovers in the fridge for up to 3 days or freeze up to 2 months. Reheat with a splash of broth for the best texture
