  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup milk (or milk alternative)
  • Zest of 1 orange
  • 1/2 cup orange juice
  • 1 teaspoon ground cardamom
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line it with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cardamom, and a pinch of salt.
  4. In a large mixing bowl, cream the butter and granulated sugar until light and fluffy, about 3-5 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then mix in the orange zest and juice.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until just combined.
  7. Fold in the chopped figs gently.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 30-40 minutes until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

For a vegan option, substitute eggs with flaxseed meal, use coconut oil or vegan butter, and non-dairy milk.
