- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1–2 teaspoons peppermint extract
- 1 cup crushed peppermint candies or candy canes
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking soda, and salt.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the egg and vanilla extract to the butter mixture, mixing until well incorporated. Adjust the peppermint extract according to taste.
- Slowly mix in the dry ingredients until just combined.
- Gently fold in the crushed peppermint candies.
- Using a cookie scoop or tablespoon, drop dollops of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a dairy-free option, substitute coconut oil for butter. You can also use whole wheat flour for added fiber.
