  • 12 teaspoons peppermint extract
  • 1 cup crushed peppermint candies or candy canes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg and vanilla extract to the butter mixture, mixing until well incorporated. Adjust the peppermint extract according to taste.
  5. Slowly mix in the dry ingredients until just combined.
  6. Gently fold in the crushed peppermint candies.
  7. Using a cookie scoop or tablespoon, drop dollops of dough onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a dairy-free option, substitute coconut oil for butter. You can also use whole wheat flour for added fiber.
