- 1 ½ cups All-Purpose Flour
- ½ cup Granulated Sugar (or Coconut Sugar)
- ⅓ cup Cocoa Powder
- 2 tsp Baking Powder
- ½ tsp Baking Soda
- ¼ tsp Salt
- 2 Eggs (or Flax Eggs for vegan)
- ¾ cup Milk (or Almond/Oat Milk)
- ⅓ cup Vegetable Oil (or Unsweetened Applesauce)
- 1 tsp Vanilla Extract
- 1 tsp Peppermint Extract
- 1 cup Semi-Sweet Chocolate Chips
- ¼ cup Crushed Peppermints (or Candy Canes)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat together eggs, milk, vegetable oil, vanilla extract, and peppermint extract.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Fold in the chocolate chips evenly into the batter.
- Distribute the batter into the muffin tin, filling each cup about 2/3 full, and bake for 18-20 minutes.
- Allow to cool for a few minutes before transferring to a wire rack and sprinkle with crushed peppermint.
Notes
For a gluten-free version, substitute with a gluten-free flour blend. Enjoy warm or with whipped cream or vanilla ice cream.
