Ingredients

  • 1 ½ cups All-Purpose Flour
  • ½ cup Granulated Sugar (or Coconut Sugar)
  • ⅓ cup Cocoa Powder
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 2 Eggs (or Flax Eggs for vegan)
  • ¾ cup Milk (or Almond/Oat Milk)
  • ⅓ cup Vegetable Oil (or Unsweetened Applesauce)
  • 1 tsp Vanilla Extract
  • 1 tsp Peppermint Extract
  • 1 cup Semi-Sweet Chocolate Chips
  • ¼ cup Crushed Peppermints (or Candy Canes)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together eggs, milk, vegetable oil, vanilla extract, and peppermint extract.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chocolate chips evenly into the batter.
  6. Distribute the batter into the muffin tin, filling each cup about 2/3 full, and bake for 18-20 minutes.
  7. Allow to cool for a few minutes before transferring to a wire rack and sprinkle with crushed peppermint.

Notes

For a gluten-free version, substitute with a gluten-free flour blend. Enjoy warm or with whipped cream or vanilla ice cream.
