Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine the all-purpose flour, cocoa powder, baking powder, and salt. Whisk until blended.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, vanilla extract, and peppermint extract. Mix until just combined.
- Add the red food coloring, mixing until you reach the desired shade.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the white chocolate or peppermint chips until evenly distributed.
- Scoop the dough onto baking sheets lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set but centers remain soft.
- Remove from oven, let cool on the baking sheet briefly, then transfer to a wire rack to cool completely.
Notes
For a vegan option, substitute eggs with 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water.
