- Dill or Bread and Butter Pickles
- 1 cup All-Purpose Flour
- 1/2 cup Cornmeal
- 2 large Eggs
- 1 tsp Baking Powder
- 1 small Onion, finely chopped
- 1 tsp Garlic Powder
- Salt and Pepper to taste
- Cooking Oil for frying
Instructions
- Prepare the Ingredients: Chop the pickles and onions into small, bite-sized pieces.
- Mix the Dry Ingredients: In a bowl, combine flour, cornmeal, baking powder, garlic powder, salt, and pepper. Whisk until blended.
- Add the Wet Ingredients: In a separate bowl, beat the eggs, then add the chopped pickles and onions. Fold into the dry mixture without overmixing.
- Heat the Oil: In a skillet, heat about 1/2 inch of oil over medium heat until it reaches 350°F (175°C).
- Fry the Fritters: Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes on each side until golden brown.
- Drain and Serve: Remove fritters with a slotted spoon and drain on paper towels. Serve hot with a dipping sauce.
Notes
For a healthier option, bake the fritters in a preheated oven at 425°F (220°C) for 15-20 minutes instead of frying.
