Ingredients

  • Dill or Bread and Butter Pickles
  • 1 cup All-Purpose Flour
  • 1/2 cup Cornmeal
  • 2 large Eggs
  • 1 tsp Baking Powder
  • 1 small Onion, finely chopped
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste
  • Cooking Oil for frying

Instructions

  1. Prepare the Ingredients: Chop the pickles and onions into small, bite-sized pieces.
  2. Mix the Dry Ingredients: In a bowl, combine flour, cornmeal, baking powder, garlic powder, salt, and pepper. Whisk until blended.
  3. Add the Wet Ingredients: In a separate bowl, beat the eggs, then add the chopped pickles and onions. Fold into the dry mixture without overmixing.
  4. Heat the Oil: In a skillet, heat about 1/2 inch of oil over medium heat until it reaches 350°F (175°C).
  5. Fry the Fritters: Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes on each side until golden brown.
  6. Drain and Serve: Remove fritters with a slotted spoon and drain on paper towels. Serve hot with a dipping sauce.

Notes

For a healthier option, bake the fritters in a preheated oven at 425°F (220°C) for 15-20 minutes instead of frying.
